Thoran is Kerala's everyday dry vegetable: finely chopped vegetables steamed in their own moisture with a crushed mix of coconut, green chilli, garlic and turmeric. Cabbage thoran is the quickest and one of the most loved – Austrian Weißkraut is perfect.

Ingredients

  • 500 g white cabbage, very finely shredded
  • For the coconut mix: 80 g grated coconut, 2 green chillies, 2 shallots, 2 garlic cloves, ½ tsp cumin, ¼ tsp turmeric – crushed coarsely
  • 1 tbsp coconut oil
  • ½ tsp mustard seeds
  • 1 tsp urad dal
  • 1 dried red chilli
  • 10 curry leaves
  • ¾ tsp salt

Method

  1. Heat the coconut oil, add mustard seeds, urad dal, chilli and curry leaves.
  2. Add the cabbage and salt, stir, cover and cook on low heat for 4–5 minutes.
  3. Make a well in the middle, add the coconut mix, cover with cabbage and steam 2 minutes.
  4. Mix everything and cook uncovered 1–2 minutes until dry. Serve with rice and sambar or fish curry.

Tip: Shred the cabbage really fine – it cooks in minutes and stays sweet.
