Anda bhurji is street food from the egg carts of Mumbai and a quick dinner all over India. Eggs are scrambled with a little onion-tomato masala until soft and fluffy.

Eat it with pav (soft bread rolls), toast or chapati.

Ingredients

  • 4 eggs
  • 1 tbsp butter or oil
  • ½ tsp cumin seeds
  • 1 onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 tomato, finely chopped
  • ¼ tsp turmeric
  • ½ tsp Kashmiri chilli powder
  • ¼ tsp garam masala or pav bhaji masala
  • Salt
  • 2 tbsp chopped fresh coriander

Method

  1. Heat the butter, add cumin and let it sizzle.
  2. Fry the onion and green chilli until soft, 3 minutes. Add the tomato, turmeric, chilli powder and salt and cook until soft, 3 minutes.
  3. Break in the eggs and leave for 20 seconds, then stir slowly on low heat until just set and still moist.
  4. Sprinkle with garam masala and coriander and serve at once.

Tip: Take the pan off the heat a little early – the eggs keep cooking on the plate.
