Ingredients

  • 100 g fine semolina (sooji)
  • 80 g ghee
  • 100 g sugar
  • 400 ml water (or half milk)
  • ½ tsp ground cardamom
  • A few saffron threads
  • Cashews, almonds and raisins

Method

  1. Boil water with sugar, cardamom and saffron and keep hot.
  2. Melt ghee in a pan, fry the nuts and raisins briefly and take them out.
  3. Roast the semolina in the ghee on low heat for 8–10 minutes, stirring, until golden and fragrant.
