In UP, kaddu ki sabzi is served with puri and boondi raita at weddings, Holi and Navratri. Fenugreek and fennel seeds give it a warm aroma, amchur and jaggery the classic khatta-meetha taste. Hokkaido or butternut pumpkin from Austrian markets is perfect.
