Jadoh is the everyday comfort food of the Khasi people in Shillong. Rice is cooked with meat, lots of ginger, onion, turmeric and black pepper – simple, warming and very fragrant. Chicken works if you prefer.

  • Famous in Meghalaya

Ingredients

  • 500 g pork shoulder or belly (or chicken thighs), in small cubes
  • 250 g short-grain or red rice, washed
  • 2 tbsp oil (or pork fat)
  • 2 onions, finely chopped
  • 2 tbsp grated ginger
  • 1 tbsp chopped garlic
  • 1 tsp turmeric
  • 1 tsp black pepper, crushed
  • 2 bay leaves
  • 1½ tsp salt
  • 700 ml water

Method

  1. Heat the oil and fry the meat until browned and the fat has rendered.
  2. Add onions, ginger and garlic and fry for 5 minutes until soft and golden.
  3. Stir in turmeric, pepper, bay leaves and salt, then the washed rice and fry for 2 minutes.
  4. Pour in the water, bring to a boil, cover and cook on low heat for 20–25 minutes until the rice is soft and the water absorbed.
  5. Rest 5 minutes covered and serve with a chilli chutney and a simple salad.

Tip: Some Khasi cooks add a spoon of pork blood at the end – this version skips it.
